As a vegan the best banana bread you’ll ever eat is moist, flavourful and tastes like the nostalgic, traditional banana bread you know and love. This article will teach you how to make a vegan banana bread.

INGREDIENTS NEEDED
• Overripe bananas. Your bananas need to be overripe. It must have a lot of brown spots and preferably almost as much brown peel as yellow. Using bananas that aren’t ripe enough will not only affect the banana flavour of your bread, but it will give it a dry, chewy texture.
• Sugars. It must be granulated white and brown sugar. Make sure both are organic in order to keep the recipe vegan. Coconut sugar can be substituted for brown sugar if you’d like.
• Coconut oil: a little melted coconut oil gives the bread the perfect amount of moisture. Of course, you’re welcome to use vegan butter, olive oil, walnut oil, hazelnut oil, etc.
• Vanilla extract.
• Flour. The recipe calls for all-purpose wheat flour, which is the only type I’ve tested it with. I’ve had a few readers that had success with various gluten-free flours though. Check out the comments below the recipe to read about their results. I suspect that whole wheat pastry flour or a mix of white and whole wheat flour would also work.
• Baking soda.
• Cinnamon. You can leave this out if you insist, but it adds a wonderful flavour to the loaf.
• Salt.
• Walnuts. You’re welcome to substitute another type of nut such as pecans or hazelnuts, or use your favourite banana bread stir-in, such as chocolate chips.
Method of making a banana bread
• Mash your bananas up in a large bowl using a fork or potato masher.
• Add some oil, sugar, brown sugar, and vanilla to your mashed banana, then stir everything up.
• When your wet ingredients are mixed you can add the dry ingredients: flour, baking soda, cinnamon, and salt.
• Fold the nuts into you batter, being careful not to overmix it.
• Pour the batter into a prepared loaf pan, smooth out the top, and sprinkle with brown sugar. This will give
• Bake your loaf for 50 minutes at 350°.
• Let the bread cool on a cooling rack for a few minutes before slicing.
Tips to make the best vegan banana bread
1. Extra ripe bananas are best. The key to delicious banana bread flavor is to use bananas with lots of brown spots. They’re sweeter and give the bread the perfect flavor!
2. Use room temp ingredients. Be sure to cool your coconut oil after melting it so that it doesn’t seize up when mixed with any of the other ingredients.
3. Do not overmix. Overmixed batter results in a dense, gummy bread. Mix the vegan banana bread batter until just combined. It’s okay if there are still lumps of banana!
4. Use fresh baking soda. The best way to ensure that your bread rises properly is to use fresh baking soda. If it’s older than 3 months you might want to grab a new one.
5. Prep your pan properly (and use the correct size). Line your 8×4 inch loaf pan with parchment paper and spray it with nonstick cooking spray so that the banana bread comes out easily and doesn’t stick. Changing the size of the pan will alter the baking time, so be sure to watch your bread if you use a bigger pan!
